India — Cherry AB

Origin: Karnataka and Kerala (Western Ghats)

Profile: Rugged, Toasty, and Deep

India Cherry AB is a robust and economical choice for those who want the classic, high-intensity flavor of Indian sun-dried Robusta. The “AB” grade is a combination of A and B bean sizes (typically Screen 15, 16, and 17). Because these beans are Natural Processed (Cherry), they spend a significant amount of time drying in the sun, which develops a heavy, fermented body and a distinctively “toasty” aromatic profile.

While the bean sizes vary more than in a straight “AA” lot, Indian sorting standards remain high. This grade is prized for its ability to provide a massive caffeine boost and a thick, stable crema at a very competitive price point.

Flavour Experience

  • Body: Full and heavy; very “syrupy” when pulled as espresso.

  • Notes: Pronounced bittersweet chocolate, roasted malt, and earthy spice, with a rustic hint of dried tobacco.

  • Acidity: Very low to non-existent.

  • Finish: Bold and lingering with a charred wood or dark cocoa sweetness.

Best Enjoyed As

India Cherry AB is the ultimate “utility” bean for roasters who need strength and stability:

  • The “Morning Punch” Blend: Perfect as a 20-30% component in breakfast blends to provide that necessary caffeine “kick” and a bold, traditional flavor.

  • Milk-Based Espresso Drinks: Its deep, slightly bitter cocoa notes are not lost when mixed with milk; it ensures a latte actually tastes like coffee.

  • Institutional/Vending Coffee: Due to its density and low acidity, it performs exceptionally well in automatic brewers and high-volume environments where consistency is key.

The “AB” Versatility

Because this grade includes a mix of bean sizes, it can offer a slightly more complex “rustic” flavor profile than the uniform AA. The smaller beans in the mix often roast a bit darker and faster, adding a “toasted” complexity to the cup that many traditional coffee drinkers associate with a “strong” brew.
